Thoughts from a Cake Decorating School drop-out
So I happened across this fantasticly witty blog about cake decorating going brilliantly awry while reading a friend’s blog. As someone who formerly decorated cakes for a living, I found myself giggling my way through this amazing treasure only to be overcome with a gasp of dismay–What if I was once a subject of such mockery and hilarium?!? Horror!
I did indeed attend a “Wilton’s Cake Decorating Class” with the intention of completing the course. My studies were cut short however by the fact that I was then scheduled to work on said class night. So I spent grueling hours pouring over books practicing my writing and flower making and petal piping. I did ice cream cakes which brought a whole new dimension into the process: frost. Yes, sadly, I had a few cakes ruined by frost which caused the colors of my icing to bleed creating a scary mess.
I did have a few stellar creations though and I’m sad that I don’t have pictures to show…I guess you’ll just have to trust me on this one.
Most interesting cake: A man asked me to decorate a cake with icing roses, plant a diamond ring (real) on the top, pipe, “Will you marry me ___?” and display it in the case one evening. He brought his girlfriend in and showed her around and we all waited trying to not be too distracted from serving other customers. All at once there was this delighted shreik and the next thing we knew, he was twirling her around and there was a hearty round of applause. Sweet!
Most made cake: For boys–Spiderman: red cake, blue writing, white web piped all over the top; For girls–Barbie princess: fill a bowl with ice cream, stick Barbie in middle, ice like a dress.
Favorite to make: this was a more simple-yet-elegant design–white cake, fudge top, white chocolate swirl in fudge, oreo halves around edge, icing “kisses” all around, chocolate drizzle off sides, fine cookie crumbs sprinkled on top…mmmm…

I love that site! Between that and the show “Ace of Cakes,” I have been getting an education on cake-decorating this fall.
