Recounting Recent Recipe Re-creations

I have this little habit of attempting accurate replicas of recipies I enjoy out and about.  Some time ago I sampled a delightful Asian Chicken Salad but my appetite was lost when I paid the bill for the ridiculously overpriced salad.  So I began a quest to recreate the deliciousness I had experienced.   I collected ingredients, I selected my produce, I sampled and I tasted.  I gathered everything.  Everything, that is, except the elusive dressing.  I was at a loss as to how to concoct such a tangy, salty, sesame yumminess.

And then it happened.  I was perusing the selection of salad dressings at my local market.  And there I beheld tsoy-vay-2he Holy Grail of my Asian Chicken Salad quest: Soy Vay Cha Cha Chines Chicken Dressing.  It looked like it possessed all the components I was looking for.  Better still, it’s a play on one of my favorite Yiddish phrases; clearly this was divine providence!  In a moment, it was purchased and I was away to my test kitchen for the first trial re-creation.

Once home, I assembled all my ingredients: shredded cabbage, chopped iceberg lettuce, thinly sliced green onion, crispy wonton strips, rosted almond slices (these were left over and tucked away in the freezer after a recent batch of Honey Almond Delight–the recipe and making of which I shall soon share), chicken (I used left-over rotisserie chicken) and finally, the Pièce de résistance: Soy Vay Cha Cha Chinese Chicken Dressing.  I tossed the whole shebang and tasted.  mmmMMMMmmm, delicious!   And what a fantastic replica recipe this was!
